Tomato Soup

Kids Pantry Tomato & Basil Soup (Serves 2)


  • 6 -8 ripe tomatoes, chopped  or 2 x 440gm canned diced tomatoes
  • 2 cups of freshly made chicken stock
  • 2 cloves garlic, finely chopped + an extra for the toast
  • 1 Spanish onion, diced
  • 2 bacon rashers, diced
  • 20 Basil leaves, torn
  • Salt & Pepper to season
  • Shaved parmesan
  • Toasted Italian Bread brushed with olive oil and rubbed with a cut garlic clove.



  1. Wash tomatoes and roughly chop, set aside.
  2. In a medium saucepan, sauté onions until soft
  3. Add bacon to onion mix and cook until lightly golden brown
  4. Add finely chopped garlic and sauté for 1 minute
  5. Add tomatoes and stock and bring to the boil.
  6. Reduce heat to medium to reduce the liquid by half
  7. Lightly toast Italian bread, brush with Olive oil and rub a fresh garlic clove over the toast.
  8. When soup has reduced and slightly thickened, add fresh torn basil leaves and remove from heat.
  9. Serve into a soup bowl, top with shavings of Parmesan cheese and serve with crusty Italian garlic toast.
