Pineapple & Mint Salad

 

Ingredients

1 large chunk pineapple

1 tablespoons caster sugar

8-10 fresh mint leaves

Optional: natural yoghurt, to serve

 

Method

1.       Cut the skin off the Pineapple and remove any black bits

2.       Cut the core out (this is the hard bit in the middle)

3.       If you are confident with using a knife, cut your pineapple lengthways as thinly as possible. Otherwise cut in small portions before slicing thinly. 

4.       Place caster sugar and mint leaves into a mortar and pestle and start pounding until your sugar turns green. Have a little smell, its fresh and yummy!

5.       Arrange your thinly sliced pineapple onto a plate and sprinkle with mint sugar. If you like add some yogurt to the side for an extra tasty dessert.
