Marinated Cheese Skewers



50gms of cheese of your choice (mix the varieties for a  

yummier skewer)

1 & ½ tablespoons of mixed herbs (corriander, basil,

parsley, finely chopped)

1 teaspoon lemon juice

¼ teaspoon lemon zest

½ cloves garlic, crushed

2 teaspoons extra virgin olive oil

Salt & Pepper to season



1.       Cut cheese into 1 cm cubes.

2.       Combine the herbs, lemon juice and zest, olive oil, garlic, salt and pepper into a bowl. Add the cheese cubes and toss to coat. You can eat this straight away or you can cover tightly with cling wrap and refrigerate for at least 4 hours to let the flavours blend


Presentation Suggestions – cheese & veggie skewers

3.       Put a piece of cheese cube on a 12cm wooden skewer or a regular toothpick. Then thread one of the following ingredients in a pattern

Small cube of bread, cucumber, olives, red capsicum, onion, cherry tomato, semi dried tomatoes, panchetta etc

4.       Thread a leaf of fresh basil, mint, coriander, or parsley on the end of the skewer or toothpick.
