Mini Zucchini Slice with Minted Yoghurt


¼ Spanish onion
1 clove garlic
50g bacon
2 eggs
1 zucchini
1 piece red capsicum
60g flour
1 tbs vegetable oil
20g feta, crumbled
¼ cup grated cheddar cheese
2 tbs Greek yoghurt
5 mint leaves
Squeeze lemon juice


1.       Preheat oven to 170°C.

2.       Grease an oven proof tray with oil spray.

3.       Take a chopping board and knife and carefully dice onion and bacon. Push to the side of your board.

4.       Use a garlic crusher to mince garlic on top of onion and bacon.

5.       Place a frypan over medium-high heat and drizzle with olive oil.

6.       When hot, add onion, garlic and bacon and cook until soft, for about 3 minutes. Be careful not to overcook as this mixture will continue to cook in the oven.

7.       Remove mixture from pan and set aside.

8.       Place a grater on your chopping board and coarsely grate zucchini. Squeeze all the moisture out from zucchini and set aside.

9.       Dice capsicum. Set aside.

10.   Beat the eggs in a medium bowl until combined. Add the flour and continue to beat until you have a smooth consistency.

11.   Next, add the zucchini, capsicum, cheeses, oil and onion/bacon/garlic mixture. Stir to combine.

12.   Pour mixture into prepared tray and bake in oven for 20-30 minutes or until cooked through.

13.   Meanwhile, combine Greek yoghurt, torn mint leaves and a squeeze of lemon juice in a bowl. Place in fridge for 30 minutes to allow the flavours to meld together.

14.   Remove slice from oven and serve with minted yoghurt sauce.

15.   Enjoy!
